They were surprisingly easy to make. I used vanilla cake mix and canned vanilla frosting, but I made the cupcakes special by scooping out some of the cake and filling them with lemon curd. I also added a dollop of the curd to the top of the cupcakes for decoration.
You can use the same method to fill them with pretty much anything. I may try filling them with chocolate fudge next time, or maybe some marshmallow fluff. The more things I try, the more I get to eat, right? :-)
